So I pulled out some lettuce leaves, whipped up an AMAZING salsa and topped it off with semi dried tomatoes and parsley.
The taste was HEAVENLY. The picture shows two, but I ate FOUR of these little suckers.
To make the salsa:
4 smallish tomatoes
2 mini cucumbers
1 brown onion
4 sploshes of extra virgin olive oil
Big dash of apple cider vinegar
1 tsp salt (I used himalayan)
Dash of maple syrup
Blend in a high performance blender. Mine almost pureed but you could make it chunkier!
