Ok, this does look pretty gross I'll admit it. But the reason why I didn't snap a good pic is because I was just doing a random kitchen experiment and totally did not expect it to taste delicious. This picture is of my SECOND helpings.
There's a looooong story to this:
So I was making something that Mum makes which she used to call 'stir fry'. Now this thing she makes is zucchini, onion and tomato. It's NOT good and it's NOT stir fry. But you know how when you're a kid you believe everything your parents tell you? Well I believed her. She said it was stir fry so who am I to say any different? I just knew it was gross and it was about the ONLY thing I wouldn't eat as a kid and if I won't eat something...it's pretty bad.
Well the day I found it wasn't stir fry, I was 15 years old and at my friend Karolina's house. She says "we're having stir fry for dinner" I politely said "oh no thanks I don't like stir fry". I really hoped I didn't sound rude but just the thought of the word 'stir-fry' made my stomach turn. So they bring it out and start eating their stir fry. It smells DELICOUS, it LOOKS delicious. I see broccoli, I see cauliflower, I see little seeds and soy sauce.....what IS this magical stuff? I ask. "It's stir fry Mel!". Oh dear. They seem very convinced this is stir fry. Given how DELICOUS theirs looks and how revolting my Mum's looked, I think I'm going to go with...them. So I said "can I please have a bowl? For some reason I was labouring under false illusions as to what stir fry actually is". How. Embarrassing. Mum. Thankyou Karolina and family.
Soooooo anyway I went home and told Mum ALL about it and I kindly informed her she was never to call her dish stir fry again. She took it on the chin- thank goodness. She decided to call it 'Zucchini, Onion, Tomato". Yep she did.
Then (oh about 15 years later) Mum makes it and I look at it and think 'you know what might go well in this? Coconut cream!' So I pop in in and VOILA! Bloody magical!
So tonight I was making the 'zucchini, onion, tomato' with coconut cream (I seriously gotta come up with a shorter name) and I just had a thought to put quinoa in.
Holy. Fricken. Moly.
No time for photos, too busy eating.

Oh a recipe!
Put some coconut oil in a pan (I like scanpan) on low heat
Chop up a red onion (I think red onion not white onion is key) and pop it in
Chop up some red capsicum and pop it in
Chop up some zucchini and pop it in
Chop up about 2-3 tomatoes (I like vine-ripened) and pop them in
Pour through a tin of coconut cream
Let it simmer for a while with the lid on
Add in some white quinoa between 1/2 to 1 cup, just go by feel
Now I left mine and it ended up getting stuck to the pan LUCKILY I easily just moved it off because I was using a scanpan. If you're using another type of pan you may want to stay nearby.
Once it reduces down you know you're done!
